The first years establish the health and character of the fish. Water quality, feed and space are observed with patience and precision.

Amour Caviar

Acipenser schrenckii

Amour opens with cream, then butter, followed by a soft lactic warmth that lingers rather than lifts. Salinity is almost an afterthought, allowing the caviar to read closer to cultured cheese than to the sea.

It is the gentlest caviar in the collection, and often the most persuasive.

At the table
Warm blini, crème fraîche, soft egg, potato. Amour rewards richness and simplicity, or anything with enough fat to meet it halfway. Acid and smoke should be used with restraint to allow its quiet character a chance to speak.

Salting process

Significant lower salting

Salt is applied with restraint. Enough to reveal depth and preserve the grain, never enough to conceal the caviar’s natural expression.
